Preparing Ahead

Today's Works for me Wednesday is Christmas -ish so I thought I would share what we do to prepare ahead and save time during the holidays.

For Christmas Eve dinner we always have tortierre. I plan to make this the day ahead and then I can just pop it in the oven to heat up before dinner. This frees me up to enjoy family time rather than being in the kitchen making dinner.

For breakfast Christmas morning we usually have "wifesaver" this is an easy recipe that allows you to make it the night before and then pop it in the oven when you get up and by the time you have finished opening presents it is ready!

Here is the recipe ....

Wifesaver

6 eggs

1/2 lbs. cubed ham

12 (or more) slices buttered bread - crusts removed

2/3 lb. grated cheese

2 1/2 cups milk

1 1/4 tsp. salt

Asparagus or broccoli (slightly cooked and drained and cut in bite size pieces) We use white asparagus in the jar and don't cook it ahead.

Combine - Milk, eggs and salt. Blend well.

Layer 1 - press 6 (or more) slices of bread in bottom of pan. Spread ham and cheese over bread.

Pour half the egg mixture over this. Spread around asparagus.

Layer 2 - Put another layer of bread over this and then cover with remaining egg mixture. Press down. Cover and refrigerate overnight.

Bake uncovered at 325 for 45 minutes.

Another time saver is to make the day before anything you can for Christmas dinner. We do this for most holidays and often we will cook and carve the turkey the day before and place it back in the pan in the gravy. This makes dinner time so much easier and frees up time and space to get everything else ready.
