Broccoli Soup


This is one of the recipes that was shared last night. I was certainly surprised when I tried it and loved it as I had never cared for broccoli.

Here is the recipe....

Broccoli Soup

3-4 cups chopped broccoli (idea- when you make broccoli salad retain a few tops and all the stems for broccoli soup)
3-4 cups diced potato
1 medium onion, diced
Cover the veggies in a large saucepan with chicken stock.
Cook 15-20 minutes. Do not overcook as broccoli looses color and gets a strong flavor.
Puree in a blender or food processor. This soup is good as is but you may want to add milk or cream just at serving time.

Garnish with dill weed, nutmeg or curry if desired. Can also add grated cheese.
