Stuffed Roast Pepper Soup


Today a made a big pot of this yummy soup for dinner so that we can have leftovers for dinner tomorrow. I find that doing this really frees up my time to get other Christmas projects finished up before the festivities begin.

This soup is so good and very easy to make. I still have chopped green peppers in the freezer so I just put in a heaping cup of those for each of the peppers called for in the recipe - so quick!

Stuffed Roast Pepper Soup

2 lbs. ground beef
1 onion diced
6 cups of water
8 beef bouillon cubes
2 28oz. cans diced tomatoes with liquid
2 cups cooked rice
2 tsp. salt
1/2 tsp. pepper
3 green, yellow or sweet red peppers chopped

In a large pot cook ground beef and onion until browned, drain.
Add the rest of the ingredients except peppers and stir well.
Bring to a boil, reduce heat and simmer covered for 1 hour.
Add peppers and cook uncovered for 15 minutes or until tender.

Makes - 14-16 servings. 4 quarts.

Mmmm... this sounds good. I would substitute ground turkey, and I might give this a try during these brrrrrr cold days!
