Cauliflower

Yesterday I was inspired by my friend Lisa to pick up some cauliflower while it was on sale and prepare it for the freezer so I would have it handy for recipes.

I got two big heads for $1 each and was surprised by how much that is when you cut it up. I had to use quite a big pot to do both heads at the same time. I boiled it until it was soft and then used my food processor to puree it. I then froze it on a cookie sheet in half cup measures. When they were fully frozen I took them off the sheet and put them in a Ziploc bag. Now I am ready to make many of the recipes like the cauliflower banana bread I mentioned in another post.

I just love preparing ahead and knowing that I have my freezer stocked up!

Sunday's Sermon


This past Sunday we were blessed to have Rev. Schwindt visit our congregation and give the sermon. I just love him...he is one of my all time favorite people. I thought I would share a few points from the sermon he gave since I was so moved by it. I am sure it won't do it justice as he is just so excited about the Lord and His promises and that radiates from his very being. It is something to see!

He said that God's power is still available to His church today. John 16:33 says
"I have told you these things, so that in me you may have peace. In this world you will have trouble. But take heart! I have overcome the world."

1 John 5:3-5 This is love for God; to obey his commands. And his commands are not burdensome. for everyone born of God overcomes the world. This is the victory that has overcome the world, even our faith. Who is it that overcomes the world? Only he who believes that Jesus is the Son of God.

We are to be settled in our faith, spirit and emotions.
We are to be victorious, over comers not defeated.
We live in times that try men but God wants to turn our pits into the Ritz.
The devil does not have enough armies to bring us down if we trust in the Lord.
Faith is blind to impossibilities, it knows no defeats only victory.
We must think, talk and live victory - Jesus died there is no room for defeat.

Three points to live victoriously...

1. Sing your way through your problems.
He shared the story in 2 Chronicles 20.
It doesn't matter if you have a wonderful voice , have a joyful heart.
Eph. 5:19, Psalm 42, Psalm 149, Psalm 43.
You can sing your way out of a spiritual prison. Acts 16:25,26
If we sing a song off victory we will sail past the devil and his troops.
Worldly songs won't do it.
You can't keep someone down who has the song of the Lord in his heart. There is power in praise.

2. Keep your eyes on Jesus.
People can fail us and put us down and we can think what's the use I give up.
Jesus says rise up and be whole.When we have our eyes on on Him past hurts heal, spiritual legs that were crippled rise up. Spiritual scales fall from our eyes and we see Jesus.
Jesus says you CAN do it.
Matthew 14:25-33
What seas overwhelm you? What problems are causing you to sink? Jesus takes our hand and we walk together. He says we will not sink.

3. Power of Prayer
There are so many examples throughout the Bible of the power of prayer (He listed several of them)
Prayer is still powerful today for those in right standing.
The church today and our lives move on prayer.
Nothing can ever replace prayer.
Pray daily, we need intercessors.
Seeing a bully picking on a child and then seeing that child's older brother come around the corner and the bully flee is like Jesus and us. He is our older brother who saves us from the bully the devil. He has already beaten him!
Ephesians 3:19,20
God wants us to live in expectation of all He will give us. How much more will God want to do for us and give to us now that we know Him and are his children when He died for us even though we didn't know Him.
Be excited, expect more, thank Him. Be on the edge of your seat!
When you get up each morning ask God what He has for you today.
Let faith loose in your heart.

It was an incredible sermon I wish everyone would have the opportunity to hear Rev. Schwindt speak just once...God works through him and it changes lives.

Nearing the End?


Everyone is advising me to have our beloved dog put down. They feel it would be best for her. I think she is still enjoying life and don't want to let her go prematurely. She is 12 years old. She has a noticeable limp due to arthritis in her hip and a front foot that is slightly deformed due to a birth defect. She is on pain medication and never whimpers or anything and the vet said he had seen much worse. Her vision is fading and she is quite lumpy though the vet assured us that old dogs just get lumpy. She has recently lost weight though and sometimes you can hear her breathing loudly. But to spite all that she is happy and still romps in the backyard and mooches for food. She is still very loving and affectionate and seems very content. ~sigh~ I don't want to cause her suffering for my own selfishness, but I don't want to jump the gun either. I am just praying that God won't allow her to suffer and it is my hope that she will go peacefully in her sleep when the time is right and we won't have to make that decision. I know many of you are likely thinking that she is just a dog, that there are much bigger issues in life and I should just get over it but she has been my baby, my friend and my companion for 12 years and I love her very much.

Sorry for the bleak post...I do know God is good and cares even about the little things in our lives and that it will all work out.

Moon Corona


I saw one of these for the first time on Thursday night. The night was cold, crisp and clear and we were just coming out of our Titus Women meeting when we looked up and saw such beauty I couldn't have imagined. Around the moon was a ring of yellow, then red, blue and then green. It was so incredibly lovely. We just stood and admired it to spite the cold.

Thank you Lord for the incredible gift you give us in the beauty of Your creation.

Gossip


This is such a vile and insidious problem that is so wide spread many do not even realize that they are doing it. Casual conversations take a sudden wrong turn and before you know it you are gossiping. Gossip can be disguised as a prayer request when in fact you are just dying for a way to share a juicy tidbit and are looking for a way to justify it. Gossip hurts.If you have a problem with someone talk to them about it. If you were told something in confidence keep it to yourself. If you feel you need to ask others to pray about it just ask them to pray for the person without sharing the details. God already knows what the trouble is.
If you gossip you are guilty but you are also causing the one you are gossiping to, to sin. Please take that into consideration.

God's Word has many scriptures about being a gossip. Here are a few I came across this morning...

Proverbs 11:13
A gossip betrays a confidence, but a trustworthy man keeps a secret.

Proverbs 16:28
A perverse man stirs up dissension, and a gossip separates close friends.

Proverbs 18:8
The words of a gossip are like choice morsels; they go down to a man's inmost parts.

Proverbs 20:19
A gossip betrays a confidence; so avoid a man who talks too much.

Proverbs 26:20
Without wood a fire goes out; without gossip a quarrel dies down.

Butternut Squash Lentil Soup


This is another recipe we enjoyed last night. As it takes so long to make Eunice brought it along already prepared for us to try. There were a lot of questioning looks after finding out what kind it was but it is so yummy! Even those who do not like squash really liked this soup.

Butternut Squash Lentil Soup
4 1/2 cups cooked and mashed squash
7-8 cups chicken broth (7 cups makes soup thicker)
1 or more apples peeled, cored and chopped.
1/2 cup minced onion
1 tbsp. brown sugar
1 tsp. minced fresh sage or 1/2 tsp. ground sage (poultry seasoning or thyme will do)
1/4 tsp. ground ginger
1 cup lentils
3/4 -1 cup diced carrot
1/4-1/2 cup red sweet pepper

Add at serving time: 1/2 cup cream or 1/2 and 1/2 (Use milk if you have no cream) and sprinkle with pumpkin seeds if desired.

Combine all ingredients but cream in a slow cooker. Cook on high 3 hours or low 6 hours.
Puree in blender or food processor. Add salt and pepper to taste.

This soup freezes well.

Broccoli Soup


This is one of the recipes that was shared last night. I was certainly surprised when I tried it and loved it as I had never cared for broccoli.

Here is the recipe....

Broccoli Soup

3-4 cups chopped broccoli (idea- when you make broccoli salad retain a few tops and all the stems for broccoli soup)
3-4 cups diced potato
1 medium onion, diced
Cover the veggies in a large saucepan with chicken stock.
Cook 15-20 minutes. Do not overcook as broccoli looses color and gets a strong flavor.
Puree in a blender or food processor. This soup is good as is but you may want to add milk or cream just at serving time.

Garnish with dill weed, nutmeg or curry if desired. Can also add grated cheese.

Enjoy!

Titus Women Soup Night


Last night we had our Titus Women meeting and it was wonderful! A dear lady led us through making four different soups from scratch and we enjoyed some there and brought home two jars each to share with our families. It was a a time of fellowship, discussion and silliness while learning such a valuable skill. Unfortunately my camera died last night and I was unable to get any pictures but I would like to share Eunice's notes on soup making that she gave us.

Here they are....

1. Put on Praise and Worship music and thank God for all the pretty veggies!
2. Use a good quality soup base for broth. Check the sodium.
3. When saving a carcass (or bone) for making soup later - keep any leftover gravy, skin etc. Pieces of meat are best put in a Ziploc bag and frozen separately. Any meat boiled with the bones to make broth are pretty tasteless so keep a little good bits for the soup later.
4. Bones add calcium and phosphorous to soup.
5. You may throw a bit of veggies in with the bones for broth especially half dead carrots, celery etc. with the bad parts snipped off.
6. Dump all the bones and veggies after using them for broth. They have given their lives for the broth. add fresh meat and veggies.
7. Turkey and chicken soup typically have rice or noodles as the carbohydrate. Beef soups have pot or pearl barley. Tomato based soups often have a pasta. Some for example broccoli or cauliflower use potatoes.
8.Frequently garnish soups. Squash soup use pumpkin or sunflower seeds. Broccoli or Cauliflower use grated cheese and/or a sprinkle of dill weed/curry/nutmeg. Seafood chowders use fish crackers. A dollop of sour cream and some chopped green onions also looks good on top of some soups.

Naughty Dog


Does anyone have a helpful tip for deodorizing a carpet? I have tried washing it with vinegar, shampoo and used Febreeze. Currently it is out on our front porch airing out. I am hoping that, that will work.

She is an old dog and just can't seem to hold on until morning some nights. Poor thing but the carpet is just taking a beating. I have thought about locking her in the mudroom overnight but it is cold in there and I don't want to leave the heater on all night. She can't do stairs anymore so putting her in the basement won't work either.

Time Flies!


I can't believe how quickly time flies when you are busy! I have been planning our next Titus Women meeting which is tomorrow night with the help of my wonderful friend Lisa. I am quite excited about this one as we will be learning how to make homemade soup and we will get to bring some home with us! I have spent quite a bit of time searching for the right devotional to share as there may be a mix of Christians and non- Christians. I finally settled on this one.

Now all I have left to do for the meeting is to bake something yummy for coffee time...hmmmm....perhaps we should have something savory as well. I will have to have a peek through my recipes and see what I can find. ~smile~

I have also been working on the posters and invitations for our Easter weekend activities and for the comedian which will be performing at our church in April. Easter weekend we will be having a Good Friday Service at 11 a.m. Saturday we are having a Family Time from 2-4 p.m. where we will have activities and games for children as well as watching the Veggie Tales Easter movie. We will be giving each child a few Easter themed coloring pages and a 4 pack of crayons with an invitation to Sunday's pancake breakfast and Easter service.

Also on the go are plans for future Titus Women meetings including printing invitations to upcoming events. Next month we will be learning to scrapbook and some future ideas include self defense (still waiting for the police officer to get back to us on the date), flower arranging, meals for the freezer and child friendly foods and crafts.


So it's a busy time but alot of really wonderful things are in the works.

Who's the Boss?


Last night we were with friends and I asked my hubby not to do something that everyone else wanted him to do. He didn't do it. He is an amazing husband and I am so blessed to have him as mine. This however led to a discussion about keeping "the boss" happy. Two of the men there were saying that they are the boss until their wives are home. They joked around about it and the one wife who was there said that's right that she is the boss in their house and he has no say in what she does.

Does this seem wrong to anyone else? I tried to tell them that my hubby is the head of our house and that he didn't do it because he is a wonderful husband and he loves me not because I am "the boss".

So who's the boss? The Bible tells us the answer to that question....
1 Corinthians 11:3
Now I want you to realize that the head of every man is Christ, and the head of the woman is man, and the head of Christ is God.

Ephesians 5:23
For the husband is the head of the wife as Christ is the head of the church, his body, of which he is the Savior.

This is God's plan and there is nothing degrading about it at all. Notice that the man also has a head and that even Christ has a head. This is a loving arrangement in which families function best. If you have two people struggling to lead how do you move forward?

It isn't true that you have to be in charge to have value. It isn't true that you are a doormat if you are a submissive wife. It isn't true that you will be unhappy if you let your husband take his rightful place as the head of the family. It isn't true that you will all be ruined if you trust your husband and his decisions. It is my hope that more and more women will fall away from the lies they've been taught and will return to the way God meant things to be.

When you let go and stop the struggle there is a peace and happiness that comes into your marriage. God blesses those who follow His ways.

Homemade Refried Beans


Yesterday I made refried beans in the crockpot. They were so easy and taste just like the kind you buy! I was so glad I did make them and then decided to make cookies as well yesterday afternoon since we ended up with some surprise guests and it was so nice to have something to put out for them. We had refried beans, homemade salsa from the freezer and tortilla chips as well as washboard cookies (which are my friend's favorite kind!) Isn't it amazing how things work out that way sometimes!

Here is the recipe.

Refried Beans in the Crockpot

1 lb. dry pinto beans
2 cups water
3 cups chicken broth
3 cloves garlic minced
1 onion diced
1 tbsp. cumin
2 tsp. chili powder
2 tsp. oregano
1 tsp. salt

- Rinse beans, discarding foreign matter. Place in a large bowl. Cover with water and soak overnight.
- Drain beans and place in crockpot with remaining ingredients.
- Stir well, cover and cook on low for 8-10 hours or until tender.
-Use a potato masher to mash well and stir with a wooden spoon. Continue to cook for another hour on low.
-Stir and mash again.
- Enjoy!

I love the Mitford novels so much and was elated to discover this new book by Jan Karon which is just a wonderful story about Father Timothy Kavanagh as he journeys back to the town where he grew up. I am just finishing this book and I would love to encourage you to read it if you haven't yet! In fact if you have not yet read the Mitford novels you could start there. You won't regret it. They just have a way of drawing you right into the stories as though you are really there and really know the characters. I am looking forward to the rest of this new series called The Father Tim Novels.

Busy Weekend


This weekend was quite busy. On Saturday we had our annual meeting at church. I was there for most of the day and was voted in as co-convener of the social team and as assistant treasurer. I was the treasurer a couple of years ago so they felt I would be suited to assist this year. As for social team I really enjoy working with other ladies in the kitchen and planning events. I always seem to have some idea or another in planning stages so I was pleased to be elected. I will be working with one of my dear friends and she has so many wonderful ideas and is such a blessing! The shoes for that job are big ones to fill! The lady that headed this team had been doing it since the church started and devoted so much of her life and time to planning and running things. She is very gifted in that area and we will all be missing her leadership! She however has so many other duties at the church that keep her more than busy so she is grateful for a lighter load.

After the meeting on Saturday my hubby and I were planning a quiet evening together. As it ended up my sister had an unexpected overnight stay and we looked after her children for the night then my son had his girlfriend over and then their friend joined them and we all played a game together. Lots of fun but far from a quiet evening!~smile~

Yesterday we braved the -37 windchill and walked over to church. We had lots of visitors as many churches were closed due to weather and those who attend in other towns were unable to get there. It was nice to see so many new faces! Afterward we visited friends and last night we watched my niece and nephew again as my sister got storm stayed in another town on her way back home. All the roads in our area were closed due to blowing snow. What started out as a 2 1/2 hour drive to an airport and then back turned into a two day adventure! I am praising the Lord today that they made it back safely at last.

So it was a busy but good weekend! I hope yours was good too!

In Her Tongue Is The Law of Kindness


Proverbs 31:26 (King James Version)
She openeth her mouth with wisdom; and in her tongue is the law of kindness.

This scripture has been running through my mind lately. I have been thinking about the words that come out of my mouth to my hubby, son, friends, family and those I run into when I am out and about. Is this scripture true of me? Have I always spoken with wisdom and kindness? Do I make an effort to do so?

I was also thinking about how often everyday conversations are focused on negative things rather than being uplifting and positive. How often do we talk about what is wrong with a situation, person or thing. Do we often talk about what is right? It is natural and important to talk about your feelings good and bad with someone you trust and talking over what is wrong can help you find a solution to the problem. I think that is wonderful and that is not what I am talking about here. I am talking about when our conversations in general are tainted by negativity. When people seem to be looking for negative things in all situations.

What comes out of our mouths is a reflection of what is in our hearts.

Matthew 15:18
But those things which proceed out of the mouth come forth from the heart....

Luke 6:45
A good man out of the good treasure of his heart bringeth forth that which is good; and an evil man out of the evil treasure of his heart bringeth forth that which is evil: for of the abundance of the heart his mouth speaketh.

I am praying for a heart filled with love and kindness and that what comes out of my mouth will reflect that.

Chilly Blue Dawn


This morning I was struck anew by the beauty of God's creation. I went out to shovel the front walk before my monkeys arrived and it was so incredibly beautiful that after I shoveled I just stood out there taking it in. The sky dawned so many shades of blue and the trees were heavily covered in snow. I tried to take a few photos but they just didn't turn out. What a wonderful and peaceful way to start the day just praising the Lord for the beauty of the day and for answered prayers.

Well Dressed


I would like to encourage other ladies to dress well and take pride in their appearance. You do not have to spend alot of time or money to dress appropriately. I shop second hand for almost all of my clothing. It doesn't cost more to buy a pair of nice jeans or a skirt than it does to buy flannel pajama pants. You can be casual and comfortable and still care about your appearance. The other night my hubby and I were walking out of a department store when we were passed by a lady wearing flannel pajama pants and a ripped up dirty old shirt with messy uncombed hair. This is sadly becoming more and more common. My hubby asked me if everyone has just given up. It would seem that alot of people have.

This is a sad state of affairs! Not so long ago women all dressed up to go out of the house. They wore pretty dresses, nice shoes and hand bags and even gloves and a hat. My Nanny is from that generation and she always dresses well. She makes sure every morning that her hair is nicely styled and her make up is on. She wears jeans alot of the time but somehow on her they manage to look dressed up with a cute blouse or sweater. She cares a great deal about her appearance and the impression she gives others. She would not be caught dead out in public in a ratty outfit. She is on a fixed income and is always so lovely. It is possible for everyone.

Modesty is also such an important factor in how we dress. Buy a full length mirror and check your outfits before you step out in public. Bend over, crouch down, check from every angle. Ask yourself if you are revealing too much. If you are unsure ask your husband or a trusted female friend for their opinion. I would also like to add here something that may be a bit delicate. Please wear appropriate undergarments. I have run across far to many women that fail to wear the necessary items and it can be quite embarrassing for those they come in contact with, not to mention completely inappropriate.

It truly does not cost any more to dress well. For example, at the second hand stores in our area you can buy a skirt for $3, a pair of jeans for $4, a sweater for $3 a T-shirt for $2. Shoes can be had for $2 and purses for $1. One outfit with a skirt, sweater, shoes and a purse can be had for $9. If you need them as well undergarments of all types are .25 to $1. So for less than the cost of one pair of pajama pants at the department store you can have an entire outfit including shoes, purse and undergarments.

It is also important to dress well for your hubby and take his preferences into account. After all he is the one you want to look good for! ~smile~

You will not only look better but feel better about yourself too when you know that you are well dressed and have taken the time to ensure you are well groomed. Such self confidence can be gained just by taking this small step.

Cauliflower Banana Bread?


My friend Lisa has been telling me about a wonderful book by Jessica Seinfeld called Deceptively Delicious. I am on the waiting list at the library for one of the copies they have. Basically it has recipes for hiding vegetables in your kids food using purees. This way you ensure that they are getting what they need and you don't have to wage the dinner time veggie war!

This morning at playgroup Lisa shared some of the banana bread she made with cauilflower puree in it. It was amazing! I really do not like cauilflower so I was so excited by this! The little monkeys loved it too! Hooray for eating veggies!

Lisa mentioned that the book suggests that you still offer veggies on the plate and encourage your little ones to eat them but at least you will know if they don't that they have already eaten some without knowing it. ~smile~

Too Many Thoughts


I have so many things that I want to post about and the list is growing everyday so by the time the weekend rolls around there will be a mile long post of every topic which will take me all day if I don't post some now. ~smile~ I have a little time this afternoon as my little monkeys have gone down for nap and dinner is already underway so I thought I would post a little of what has been going on.

Tonight for dinner I am roasting a 9.5 lb. chicken. My hubby brought home four of them and they are huge! So tonight we will have roast chicken and homemade chicken rice and roni with mixed vegetables on the side. Then I will take all the rest of the meat and cut it up and divide it into packages for pot pies, chicken curry and fried rice. We will get many meals from this one chicken.

I have been spending time in prayer and reading the scriptures and it has been good. One scripture that stood out for me is John 10:27-28 which says....

My sheep listen to my voice; I know them, and they follow me. I give them eternal life, and they shall never perish; no one can snatch them out of my hand.

Isn't that a wonderful, comforting scripture? No one can snatch them out of my hand. Awesome! I am so grateful that I can count myself as one of His sheep. Can you? At my physiotherapy appointment last night I was able to share this scripture because of a sweater I chose to wear that had my sister's store logo on the back. The conversation just naturally led to that point. You never know when what you wear will open a door to share with someone. Be ready!

Getting Back On The Right Track


I recieved a great devotional about this topic this morning and wanted to share it with you. You can find it here.

This one really appealed to me since I have been feeling out of sorts lately and I had been neglecting the little things and even some big things. My house was not kept up as I usually do. Laundry was behind. And I recieved a surprise visit and I had nothing to offer them. I usually have things baked each day - cookies, cake, muffins....something...but I had nothing. It occured to me to bake something but I put it off and didn't have any flour because I hadn't made it to the store to get any. I could have made something else but I didn't and so I was embarrassed to have guests and nothing to offer. ~sigh~ To my shame my hubby even mentioned in a playful, joking way that I had been neglecting my wifely duties. But under many jokes are truth. That is the case here.

What I realized this morning is that when I get off track spiritually I get completely derailed in other areas of my life. I had resolved to really spend alot more time in personal study and in prayer and I hadn't done it. In fact I barely fit in my regular morning study.

But now that I am back on the right track things are falling into place and I am getting everything done and am happy and just enjoying life again.

I have mentioned several times before I am sure that I have fallen behind or neglected my house or gotten my priorities all messed up but I think it is good to be honest on here as I don't want anyone thinking that I have it all together all the time because I don't. I don't believe that very many people really do. It is so easy and very tempting to only write about the positive things...the things I am doing well, that make me look good and not to mention when I fall short but I am a work in progress and I am so grateful that the Lord tells us in His word that once he starts a work He will finish it.

Philippians 1:6 (New International Version)
..being confident of this, that he who began a good work in you will carry it on to completion until the day of Christ Jesus.

Praise the Lord!

In light of the fact that I really need to stay on the right track I will be updating my blog on the weekends only for the next little while as I focus more time on the Lord. As you can imagine life with 4 little monkeys doesn't leave a whole lot of free time and I think that time may be better spent in study and prayer and looking after things here. I am actually kind of excited as writing only once a week is alot like Laine's In My Home letters that she used to write once a week where she'd tell what had been going on in her home, share new recipes she was trying and letting others know how God had been at work in her life through the week as well as scriptures that had really stood out for her. It may even make my blog more interesting!! ~smile~
